 Lasagna 


 INGREDIENTS

250 g of Ragù alla Bolognese
125 g Egg Pasta
Butter for the baking tray
25 g of grated Parmigiano Reggiano
To bake lasagna
4 mozzarella 
salt
Extra virgin olive oil


Method

First make the ragu : take a large frying pan and heat 3 table spoon of the olive oil over a medium head and gently fry one small onion and two small garlic for about 10 min moving it around from time to time.While the  onion is softening , chop the 200 g meet and 200g tomato sauce and stirring gently.

On the bottom of the dish, spread ragu sauce, just enough to cover the surface. Layer with lasagna 
noodles . The mozzarella and parmeggian cheese goes next , spreading evenly.   Spread the ragu sauce over. Repeat the layering – noodles, cheese mixture and ragu sauce. Top with noodles, then add the remaining sauce and dollops of the  remaining cheese mixture. Bake for 35-40 minutes,  I left it uncovered the entire baking time to get the cheese browned the way I like it.  This trick will also get rid of the extra wetness in the entire mixture. Let cool for about 15 minutes and indulge
